I miss you Sandwich Maker!

I bought this Sandwich Maker for $6 at Walmart and it is no longer with us.  Sorry, but it was a cheap and not so great, breakable one.

My favorite thing to make in it was breakfast. 
  • Spray with pam
  • crack an egg or 2
  • layer with whatever you want: ham, cheese, onions, etc.
  • put buttered bread or hash browns (which I liked) on top.
  • close lid, and cook for 3 to 5 minutes.

Freezing

Freezing for me is so much easier then canning.  Especially with green peppers.  Just slice, bag and freeze.  Easy peasy!  I wish we could freeze everything, but some things just don’t turn out good.

Beets are a little more time consuming.  You have to cook them until tender, then cut, bag and freeze.  Try beets with a little rice vinegar, salt and pepper.  Yum!

Shrimp Cocktail

Here is a recipe my mom makes.  I really like it.  But try it for yourself.  This recipe makes a pretty big batch.

HALLOWEEN 2010 (12)

Ingredients:

46 oz. tomato juice

12 oz. ketchup

1 diced green pepper

1 1/2 Tbl. vinegar

1/6 cup lemon juice

12 oz. cocktail sauce

2 cups diced celery

1 small diced onion

1/4 sugar

4 cans drained small shrimp or 1 lb. fresh salad shrimp

Mix all ingredients together and refrigerate.  Serve with crackers.

Freezer jam

I have made this a couple of times now, and we are eating through it so fast.  We LOVE it!  And it is SO EASY to make.  Just follow the directions on the back of this package of “Ball- Simple Creations- No Cook Freezer Jam- Fruit Pectin”.

It takes,

  • 4 cups of mashed up strawberries (around 2 lbs)  I put mine in a food processor
  • 1  and 1/2 cups of sugar
  • 1 package of pectin

Stir together and put into freezer containers and ENJOY  IT…..‘until it runs out’!

It could go on anything, like…..

  • strawberry shortcake
  • crepes
  • pancakes
  • waffles
  • ice-cream
  • honey nut cheerio's
  • add it to your lemonade drink
  • and of course, toast

Steak and Everything

Now this sandwich is a memory sandwich!  It takes me back to my younger years.  I remember having it with buns and scooping out the center, so that we could fit more filling in!  Great memories!

Ingredients

  • hamburger
  • buns, this time I used onion cheese rolls.  They were great!
  • mushrooms
  • onions
  • green pepper
  • cheese
  • miracle whip
  • mustard

  • Cook hamburger, and season with salt and pepper, garlic and onion powder. 
  • Dice mushrooms, onions, and pepper and add to cooked hamburger.  Continue to cook for about 5 more minutes.
  • lay rolls or buns ‘opened’ on cookie sheet
  • spread with miracle whip and mustard
  • spoon out a generous helping of meat mixture onto bread
  • sprinkle with cheese
  • bake in oven at 400 degrees till cheese is melted

White Chicken Chili

I Love this soup.  It’s so perfect on a cold day! 

Ingredients

  • 4 chicken breast (not shown in picture)
  • 4 cans of northern beans
  • 1 or 2 cans of diced green chili’s
  • 1 can of chicken broth
  • 1 small container of sour cream
  • diced onion
  • garlic
  • spices/ salt, white pepper, cumin, cayenne pepper  (I don’t know amounts.  I just poor the spices till I like it.  Maybe about a teaspoon each!  A lot of help I am, huh?)  Just be careful with the cayenne pepper, unless you like it hot.  
  • optional- hot sauce

Cook chicken and cut into small pieces, and set aside.  Sauté the diced onions and garlic in butter, then add the green chili’s for a couple minutes.   Add the rest of the ingredients and simmer for 30 minutes.   Serve with a sprinkle of cilantro and oyster crackers on top.   Hope you enjoy!

Lasagna

Ingredients

  • Hamburger
  • Lasagna noodles
  • Sauce
  • Onions and garlic
  • Shredded cheddar and mozzarella Cheese
  • Cottage cheese (yes I said cottage cheese)  That’s how my mama use to make it!  But if you don’t want to use that, then you can use ricotta cheese.

Lasagne (4)

  • First, brown meat, and then rinse it off in Hot tap water.  It gets most the grease out.  (My husband may cuss me out someday when he has to clean the drain, but I would rather it not be in my body.   It works great!)
  • Put it back in the pan and cook it with the onions and garlic. 
  • Then add the sauce to the meat mixture.  I always throw a bit more seasonings in it like sage, thyme, oregano, basil.  Whatever is to your liking.  I like lots of seasonings.

  • Put some sauce in the bottom of the pan. 
  • Put your first layer of noodles, (uncooked).  Spread with generous amount of sauce, then shredded cheese.
  • Second layer of noodles, add sauce and then cottage cheese
  • Third layer: noodles, sauce and shredded cheese
  • Fourth layer is optional

  • Cover with aluminum foil.
  • Bake @ 350 for 1 hour, or till noodles are tender

Grilled onion & pepper sandwich

My mom was telling me about this sandwich that my brother made her, and she said it was VERY Delicious!  So of course, we wanted to try it out, and of course, we didn’t have all the ingredients, (which is my specialty)!   So we changed it a bit and it turned out great!  We’ve had it a few times since, and it’s just as good each time! 

Ingredients

  • Bread/ focacia/ flat/ (something different or exotic)
  • Deli meat, I used roast beef and turkey
  • Cream cheese,  preferably flavored
  • Onion
  • Yellow pepper
  • Tomato
  • Pine nuts

  • Sauté the onions, peppers, and pine nuts, until they are nice and soft.

  • Cut your bread thin…brush with olive oil and sprinkle with garlic.  Broil on top shelf just till slightly brown.

  • Spread with softened cream cheese, layer the deli meat,  tomato, and a generous amount of the onions, peppers, and pine nuts.

Fat Free Baked Potato Fries

Fruit Jell-O

This is SO easy….I Love how easy this is. 

Ingredients

  • cottage cheese (big container)
  • whipped topping (also…..the big one!)
  • jell-o (any flavor) add to your liking
  • fruit ( strawberries, mandarin oranges, bananas, pineapple, etc) Make sure to drain your canned fruit.

Just mix it all together, and there you have it!  My kids love it!
