Seattle Hot Dog

While in Washington, Chad and I went to Home Depot, (I guess you can call it one of our dates)!.  But as we drove up, I noticed there was a hotdog stand right there in front of the store.  Well, after we browsed Home Depot for a long while, (remember I was with Chad “The Tool Man”),  I felt hungry, so I went to check out the hotdogs.  They had all kinds of dogs.  Chicago, California, and some others, but I just can’t remember right now.  But they had a Seattle Dog, and since we were living right there next to Seattle, I had to know what one tasted like.  And guess what?…..I liked it, and so now I make it for my family here in Utah!

All you need is:

  • Hot dogs,  ( I used Beef Brats tonight, and I didn’t like them, but you can try it if you want)
  • Buns / slightly toasted
  • Onion / sautéed
  • Cream cheese (I don’t know how Home Depot Guy put the cream cheese on, but I cut it right when it came out of the fridge into thin slices, and it worked great.)  Put one slice per dog.
  • (optional) sauerkraut, relish, ketchup, mustard

It’s All Good!!

Chicken Divon

I’ve mentioned a couple recipes of my brother Berts.  Well, this is a recipe from another brother Brent.

Ingredients

  • 4 chicken breasts, cubed
  • 1 cup grated cheese
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 can Cream of Chicken soup
  • 4 cups of broccoli florets
  • crushed cornflakes

Cook the chicken until barely done.  Place it in the bottom of a baking dish.  Cook the broccoli until tender but firm.  Put it on top of the chicken.

Make a sauce of the sour cream, mayonnaise and soup.  Pour over the chicken and broccoli.  Top with cheese, and sprinkle with cornflakes.

Bake at 350 for about 30 minutes.  Serve over steamed rice.

MY VERSION:  I only do my version, because, a lot of the time, I use what I already have in the house.  This night, I didn’t have broccoli, so I used asparagus.  I also didn’t have any corn flakes, but I had french fried onions, so I used them.  Another thing I always do is put the rice on the bottom in the same dish, instead of serving it separately.  Even with all my changes, it turned out really good!

And I apologize for this half picture.  I made it for the kids and then Chad and I went out on a date.  I forgot to tell Mishae to take a picture, so here it is half eaten, actually on the next day for leftovers.  And it was still good.

Hope you all try this one.  It is excellent!

1 Hour Bread

2 Christmas’s ago, my mom gave all her children (my siblings), Bosch Mixers.  More importantly, she gave us an awesome 1 hour bread recipe.  It of course only takes 1 hour, but also taste SO good!  I think the secret ingredient is the Soy Lecithin.  My mom also gave that to us along with some yeast and the mixer.  What a GREAT mom!!!

Ingredients

  • 10 cups of flour
  • 1/2 cup of sugar
  • 1 TBS of salt
  • 3 TBS of yeast

Mix above ingredients together in your awesome Bosch mixer, (or whatever else you might use)

ADD

  • 3 TBS of Soy Lecithin
  • 4 cups of warm water

Mix for 5 minutes.  Spray the counter top with Pam or non stick spray.  Cut into 4 equal parts.

Form into shape for your bread pan.  Spray Pam on top.  Cover with a towel and let rise for 25 minutes.

dinner (13)

Bake on 350 for 25 minutes.

As you can see, my family loves it when I make bread.  The first loaf is always gone within just a few minutes.

dinner (15)

With my last quarter of dough, I make garlic bread sticks.  Go to Alynns blog and get her recipe for the topping.  I also add a little crushed garlic to my topping.  They are SO GOOD!

Cafe Rio / partly my way

I started making THIS pulled Sweet Pork a day before we had it!  Then I made the Rice and Black beans from the same site.  They turned out really good!

The part I changed was:

  • corn tortillas (warmed up in a skillet)
  • cabbage (instead of lettuce)
  • this guacamole
  • sour cream
  • plenty of onions mixed with cilantro and lime over the pulled pork!

I thought it was Delicious!

Guacamole

I LOVE this stuff!  I’ll give you my brother Bert’s Recipe.  But I don’t always have all the ingredients, so I just make it with what I have around and it is great!  Plus I don’t like it spicy, so I don’t use the spicy ingredients!

  • 6-8 avocados, coarsely mashed
  • 1-2 diced roma tomatoes, minus the juice and seeds.
  • 1 jalapeno pepper, seeded and minced
  • 1/4 medium red onion, finely chopped
  • 1 garlic clove, minced ( I just use the crushed garlic in a jar)
  • 1/4 green pepper minced (optional)
  • 1/4 cup chopped fresh cilantro
  • Lime juice to taste from 1-2 fresh limes ( I use lime juice from a bottle)
  • salt and pepper to taste ( I also add some garlic and onion powder)
  • 1-3 drops of red hot-sauce from Tapatio or Cholula (optional)

dinner (2)

I like to dice my avocados up in the skin first and then scoop them out with a spoon.  It eliminates the mess!

Serve with chips or throw some on a burrito or taco!

B-B-Q Chicken

This is so simple, yet so good!  A lot of the time I procrastinate on taking my meat out of the freezer.   So I boil it, and it works great, plus makes it more moist!  So here is my last chicken leg coming out of the boiling water.  It was in there for about 15 to 20 minutes.  Smother it with your favorite bbq sauce.  Then you can throw it under the broiler for a few minutes on each side.

Now if you don’t procrastinate, you can crock pot it for about 6 hours, with of course, you favorite bbq sauce.   Still throw it under your broiler for that extra little crisp!

Tonight I actually did both.  I boiled it, crock potted (I know, that’s not a word) it for 3 hours, then broiled it!  I would have broiled it a tad longer, but the kiddo’s were HUNGRY, and sitting at the table chanting GIVE ME FOOD!!!!

Berts Mashed Potatoes

I have never been a huge fan of potatoe's, with the exception of fries and KFC mashed potatoes. But my brother made these mashed tators for me one day, and I loved them. I don't know if I make it exactly like he does. Well, I'm sure I don't, and I really don't measure anything out, but the ingredients are:

  • Potatoes 12-15
  • 1 cup or so of sour cream
  • Or about a half a thing of cream cheese
  • (Sometimes I put both: It makes it even more srumptious)
  • A bunch of butter ( I just threw in the whole cube tonight. Heck....why not?)
  • Garlic....oh I'd say about 1 tsp
  • Salt & Pepper to your liking
  • Parsley for the look. Maybe a bit for the taste as well.
  • A little milk to cream it even more!

You know the routine..... cut the potatoes (I cut them into quarters).......boil them until they are nice and tender.......add all the ingredients.........put the lid back on for a few minutes so the butter melts..........then mash it all up really smooth!! I don't like the chunky mashed potatoes!

Delicious! Try it for yourself!

Eggs Golden Rod

For awhile now, I have been wanting to post some recipes that I have, that are my family favs. I subscribe to a few blogs that have the most delicious things. I’ll start with my awesome sister-in-law Alynn! She was just recently on Good Things Utah, and she did such a wonderful job! Click HERE to go to her site. Then there is THIS ONE. Go there and search Cafe Rio. YUMMY! And then, there is THIS ONE. They also have some great recipes!

So, anyways, I’m starting my own recipe blog. I am by far not as great as these mentioned above, but I have a few that my family likes. So I would like to share them with you.

So here it is…..Eggs Golden Rod! My mother made it for us when I was a child. Her mother made it for her, and I really don’t know how many generations it goes, but I now make it for my family, and it is their most favorite breakfast!!

Eggs Golden Rod (5)

Ingredients:

  • 6-8 hard boiled eggs
  • 1/2 cup margarine
  • 1/2 cup flour
  • 3 cups milk (I use 1 can of evaporated milk and 1 cup of water. Then more regular milk to thin.)
  • 1/2 tsp salt and pepper

I boil my eggs while I am making the sauce.

Melt butter and mix in flour. Add milk. Heat until almost to a boil. It will thicken. Add Salt and Pepper. Dice the eggs and add to sauce. Serve over toast.

We like to break our toast up. It makes it easier to eat! Hope you like it !
